Not A Sprint, But A Marathon Pancake {Recipe – Snickers and Peanut Butter Pancakes}

Yesterday was Shrove Tuesday or Pancake Day!!! Got to love a calendar event that has delicious food at the centre of the day. Past years I have may gone down the least refined route when it comes to my pancake flavours…Double Stuff Oreo Pancakes being the highlight. And this year is no different, I bring you Snickers and Peanut Butter Pancakes… Say What?!?! That’s right, small chunks of Snickers in a fluffy American pancake with nutty nuggets of peanut butter. Get flipping!

Snickers and Peanut Butter Pancakes

Adapted and butchered recipe of Joy The Baker’s Single Lady Pancakes
Ingredients
  • – 1 cup and ⅓ cup plain flour
  • – 2 tbsp caster sugar
  • – 2 tsp baking powder
  • – 1 tsp bicarbonate of soda
  • – 1 tsp salt
  • – 5 tbsp vegetable oil
  • – 1 cup plus 8 tbsp buttermilk or I use what ever is in the fridge!
  • – 3 tbsp peanut butter
  • – 200g mini Snickers, chopped
Instructions
  1. In a bowl, sieve the dry ingredients and slowly whisk in the wet ingredients and chunks of Snickers. That’s all – simple!
  2. Heat a large frying pan and add a little oil if not non-stick, ladle the mixture into the hot pan in 3 smallish blobs. They will puff up nicely, when you see the odd bubble form, flip them over, they should be nice and golden. They will only need another minute on the other side. Remove from the pan and place on a warm plate under the grill to keep warm while you finish the rest of the batter.
  3. Enjoy with more peanut butter if you are feeling naughty!
