Homemade Coconut Ice Recipe

It all started a couple of years ago when I went away to Dorset with the FunBus Crew. We had hired a house for the Easter weekend and as ever I brought homemade sweet treats for everyone. It was quite the mountain; fudge, chocolate brownies, choc chip cookies and coconut ice. Now all of that sugar inducing coma food went down very well, especially the coconut ice mainly with one person, Steph.

Ever since then, whenever I visit Steph for her birthday I make sure I make her some coconut ice. This year was no different, I’ve just spent the weekend in Dorset again camping and sat proudly on my passenger seat was some pink and white coconut ice along with a huge tray of chocolate brownies encase Steph didn’t want to share the coconut ice. Super easy to make and great for kids to make as it involves no cooking and you get to play with food colouring.

A note on food colouring, I personally find the natural colours rubbish and taste funky, I’m sticking with the artificial for now but if you get better results with the natural colours, knock yourself out.

Also below is a marshmallow my bro toasted for me on our fire, it was perfect.

Ingredients

Scale
  • 600g Icing Sugar
  • 600g Desiccated Coconut
  • 2 cans of Condensed Milk (397g sized cans)
  • 1/2 tsp Cream of Tartar
  • Red Food Colouring

Instructions

  1. In a large mixing bowl, sift the icing sugar and cream of tartar together. Pour over one of the cans of condensed milk and all the coconut. Mix through, adding the second can of condensed milk when it’s too dry to mix.
  2. Make sure all the pockets of icing sugar has been well mixed, might take some elbow grease at this stage.
  3. In a large tin lined with parchment paper, press half the mixture into the bottom of the tin, until you have an even pressed layer, packed tightly.
  4. With the other half of the mixture in the bowl, dye the mixture a vibrant pink colour, yum colourings. Mix well until the coconut is fully dyed.
  5. Press the pink mixture on top of the white mixture and press down to make an even layer.
  6. Cover but leave out on the side overnight to dry out before cutting. Share with friends or not if it’s your birthday.

    I never thought I liked coconut ice before I tried this- I still don’t like the generic stuff… but this hits a whole other level- and whenever I allow someone a nibble at my secret stash..their faces light up! Perfect treat as usual from from the food nerd!!!
